Recipe for Homemade Danish Red Cabbage (Rødkål)

This recipe for Danish Red cabbage is a traditional and very popular side dish for many different dishes. Red cabbage is served all year around, however, it's very popular at Christmas where it's served together with the traditional Christmas eve dinner the 24th of December. In Danish we call this side dish Rødkål which translated simple means Red cabbage. We have used this recipe several times and its way better than the red cabbage you can buy at the super market. It's really simple to make and you only need five different ingredients, red cabbage, vinegar, currant juice, sugar and salt. You can easily change this recipe into a more personal dish by adding different spices according to your taste.

Normally we would use currant juice in this red cabbage, however, we have sometimes used elderberry juice instead which is just as good. [Read more...]

Recipe for Homemade Danish Fried Twists (Klejner)

No Christmas without klejner! Klejner is an old and very traditional Danish Christmas snack served throughout the month of December. A klejne is a small piece of dough shaped/twisted like a small knot or diamond and then deep-fried until it is crisp and golden.

In Denmark it is possible to buy klejner at almost every super market at Christmas. However, we always make our klejner ourselves. We believe that the homemade version is way better compared to the klejner from the super market. Some people think it is difficult to make them yourselves but actually it is pretty easy. Recipe for Healthy Brownie without sugar and flour

On this page, I will share one of my personal favorite recipes - a super delicious and healthy Brownie made without any use of refined sugar and flour. If you continue to read on this page, I will show you how it is possible to make a super delicious Brownie cake, which is a healthy alternative to regular Brownie.

The secret how to make Brownie without sugar and flour

As mentioned just above, this brownie cake is made completely without any use of refined sugar and flour.

See also: Recipe for Healthy chocolate cake without sugar and flour

But how is it possible to make this brownie, which is perfectly comparable to a normal brownie packed with sugar and flour?

In just two words the secret is: dates and chickpeas. Trust me it is perfect.

Before you get scared away I will promise you that will not be able to taste either the dates or the chickpeas. You will only be able to taste the delicious chocolate brownie.
In this healthy brownie, the sweetness from the sugar is replaced by the sweet dates and the consistency from the flour is replaced by the chickpeas. It is that simple.

Brownie with dates as replacement for sugar

Before we continue, I will of course clarify that this cake is not sugar free. However, it is completely free from traditional refined table sugar. A cake need sweetness, which we in this case gets from the natural occurring sugar in the dates.

So no refined white sugar only natural occurring sugar from the dates.

Dates are known for its sweetness and is therefore a perfect substitute for traditional refined sugar. I love dates and I have several recipes here on my Nordic Food blog where the refined sugar is substituted with dates.

If you are interested in other recipes with dates you can browse my section with healthy recipes and get inspired.

Bacon wrapped green asparagus

Recipe for Bacon Wrapped Asparagus

Recipe for Bacon Wrapped Asparagus

The best recipe for bacon wrapped green asparagus is exactly what you can find here on this page.

Even though, it is many years ago since I graduated as a mechanical engineer from the university in Copenhagen I am still seeing my old friends from the school. Every second week we meet up about 10 people from my school to eat dinner together and to have a good time. It is going on by turn, where we are meeting at each other’s homes and then we cook dinner to the rest of the group.

We have a rule that the dinner should be a two-course dinner minimum. I typically always make a two-and-half course dinner; a simple pre-snack when my guests arrive and then a main course and a dessert.

These bacon wrapped green asparagus are one of my all-time favorite pre-snacks when I am having guests over.

The perfect snack for a barbecue party

A long story short, this recipe I have listed below on this page is one of pre-snack I love to make and a snack that I know people love. They are very simple to make and it does not take that long.

You can serve these bacon wrapped asparagus as they are. I personally like to make a simple homemade dressing/dipping out of some sour cream, different herbs, some lime juice, salt and pepper. You can also serve them with a good olive oil or maybe just Ketchup - basically whatever dipping sauce you prefer.

Grill or frying pan

In the summertime, you can make these bacon wrapped asparagus on the grill in the garden. However, you can also just fry them on a frying pan in the kitchen. This is up to you.

Recipe for Bacon Wrapped Asparagus

Water soaked wooden sticks

I normally use wooden sticks to secure the bacon around the green asparagus.

You can also use steel meat needles. However, I just think the wooden sticks or toothpick are a better choice. It just looks better somehow.

Basically, it is up to you. If you decide to use wooden sticks, it is a good idea to soak the sticks in water for about 20-30 minutes. This way you reduce the risk that the sticks will burn if you are cooking these bacon asparagus on a charcoal grill in the garden.

Ingredients

  • Green asparagus
  • Strips of bacon

Instructions

  • Rinse the asparagus under cold water. Dry them a little using some paper towels.
  • Cut each asparagus into three pieces.
  • Depending on the size/length of the bacon, cut them into smaller pieces. The bacon should be able to be wrapped around the green asparagus about 1-1.5 times.
  • Now wrap each asparagus with the bacon. Secure the bacon with a toothpick or other wooden sticks. It is a good idea to soak the wooden sticks in water for about 20 minutes. This prevents the sticks from burning that easily which grilling those on the frying pan or on the grill.

Recipe for Homemade Danish Cold Potato Salad (Kold kartoffelsalat)

This recipe for Danish Cold Potato Salad, or Kold Kartoffelsalat as we called it in Denmark, is a great summer side dish and is a most-have for a traditional Nordic barbecue party. Cold Potato Salad is a fantastic side dish for most types of meat especially sausages and pork made on a grill. It is very easy to prepare and it has a great and fresh taste which is perfect for a hot summer day. For me, this dish has some great memories attached to it. I always remember it from my childhood and that we almost always had it as a side dish in the summer time. I did grow up in a family where almost all dinners, during the summer period, were prepared on a grill in the garden - so of course we did eat a lot of Danish Cold Potato Salad. [Read more...]

Today, I would like to share another Danish recipe. In Denmark we refers to this recipe as 'Hens in Tartlets' or sometimes simply just 'tartlets'. Hens in tartlets is an old and very traditional Danish recipe. Even though, this is an old dish it is still very popular and is typically served at buffets at restaurants around in Denmark, at Christmas dinners or maybe just at home, a Saturday evening, when you are hungry for traditional Danish food. They are sometimes uses as a starter because of their relatively small size and 'lightness'. However, they are also sometimes served as the main course typically together with some other food. Recipe for Homemade German Pork Schnitzel

This recipe I would like to share with you here on this blog page is probably, and unfortunately, not invented in Denmark even though I would have loved it had been. Breaded pork chops is probably hard to assign to one specific country but if it should be one, it should be Germany or Austria. Denmark it located just north of Germany and part of the Danish island Jutland shares boarders with Germany. Germany is a very large country compared to Denmark - in Germany, there lives about 80 million people and compared to the 6 million people in Denmark, it is a large country. Because Germany is so large, I think it is safe to say that Germany has its own food culture. Of course, because Denmark and Germany are located so close to each other we do share a few dishes, which people from both countries, would call traditional food in their own country. Actually, the Schweineschnitzel is from Austria. However, it is widely served in Germany. [Read more...]
