Danish Pork Stew from the childhood


I remember this dish from my childhood and growing up with this dish. It was, and still is, one of my all time favorite Danish dishes - I guess it is a combination of the fact that it is super easy to make and that it is very tasteful.

It only takes about 10 minutes to prepare all the ingredients, the rest of the cooking time the stew is just taking care of itself. Most of the time it is just sitting on the stove by itself and working on bringing forward some delicious taste.

Classic recipe for Danish Pork Stew


The recipe is literally one of the easiest Danish recipes that you can find. The recipe can be divided into three main steps. Prepare and fry some of the ingredients, add the ingredients for the sauce and finally let it all simmer - simple.

Start by frying the diced onions and carrots, sliced mushrooms, bacon in bite-sizes and cocktail wieners for a couple of minutes. Add the pork tenderloin which has been cut in bite-sizes and fry for another 2 minutes. Add the spices, chopped tomatoes and heavy cream. Finally let it all simmer for 40 minutes - it is that simple to make this recipe for Danish Pork Stew. Serve directly in the pot together with rice.

The traditional Danish Pork Stew is typically served with freshly boiled rice or mashed potatoes. Personally I prefer to serve my pork stew with brown rice as they contain more dietary fibers which are good for the body.

I normally make a large portion of this stew so that I have dinner for several days.

Ingredients

  • 1 pork tenderloin (About 450 g / 1 lb)
  • 150 g bacon strips
  • 150 g mushrooms
  • 150 g cocktail wieners
  • 1 can chopped tomatoes
  • 2 onions
  • 3 carrots (diced)
  • 2.5 dl heavy cream
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp thyme
  • ground black pepper

Instructions

  • Cut the baon in smaller pieces, peel and finely chop the onions and the carrots. Clean and slice the mushrooms.
  • In a large saucepan, fry the prepared bacon, onions, carrots and mushrooms. Fry for a couple of minutes.
  • Cut the pork tenderloin in bite-size pieces and add them to the saucepan along with the cocktail weiners. Fry for a couple of minutes.
  • Add the chopped tomatoes, heavy cream, paprika, thyme and salt and pepper to taste. Let the stew simmer for 40 minutes while preparing some rice or mashed potatoes.
  • Serve hot directly in the pot together with rice on the side.

Even though, it is many years ago since I graduated as a mechanical engineer from the university in Copenhagen I am still seeing my old friends from the school. Every second week we meet up about 10 people from my school to eat dinner together and to have a good time. It is going on by turn, where we are meeting at each other’s homes and then we cook dinner to the rest of the group.

We have a rule that the dinner should be a two-course dinner minimum. I typically always make a two-and-half course dinner; a simple pre-snack when my guests arrive and then a main course and a dessert.

These bacon wrapped green asparagus are one of my all-time favorite pre-snacks when I am having guests over.

The perfect snack for a barbecue party

A long story short, this recipe I have listed below on this page is one of pre-snack I love to make and a snack that I know people love. They are very simple to make and it does not take that long.

You can serve these bacon wrapped asparagus as they are. I personally like to make a simple homemade dressing/dipping out of some sour cream, different herbs, some lime juice, salt and pepper. You can also serve them with a good olive oil or maybe just Ketchup - basically whatever dipping sauce you prefer.

Grill or frying pan

In the summertime, you can make these bacon wrapped asparagus on the grill in the garden. However, you can also just fry them on a frying pan in the kitchen. This is up to you.

Water soaked wooden sticks

I normally use wooden sticks to secure the bacon around the green asparagus.

You can also use steel meat needles. However, I just think the wooden sticks or toothpick are a better choice. It just looks better somehow.

Basically, it is up to you. If you decide to use wooden sticks, it is a good idea to soak the sticks in water for about 20-30 minutes. This way you reduce the risk that the sticks will burn if you are cooking these bacon asparagus on a charcoal grill in the garden.

  • Green asparagus
  • Strips of bacon

Instructions

  • Rinse the asparagus under cold water. Dry them a little using some paper towels.
  • Cut each asparagus into three pieces.
  • Depending on the size/length of the bacon, cut them into smaller pieces. The bacon should be able to be wrapped around the green asparagus about 1-1.5 times.
  • Now wrap each asparagus with the bacon. Secure the bacon with a toothpick or other wooden sticks. It is a good idea to soak the wooden sticks in water for about 20 minutes. This prevents the sticks from burning that easily which grilling those on the frying pan or on the grill.

I have once heard that if you add a slice of pineapple on top of food it automatic gets 'Hawaii' in its name - I have no idea where this concept is from but I like it! The sour and sweetness in a pineapple just goes perfect with so many things. In this page I have posted my favorite recipe on Hawaii pork patties in tomato sauce with mozzarella and basil. This dinner is easy to prepare - it only takes about one hour. The fact that the pork patties are cooked in an oven in a layer of nice tomato sauce makes them really juicy and delicious. The recipe is low on carbs and has a high protein content which makes this a healthy dinner. If you have never tried pineapples like they are used in this recipe, you should differently try it out.

Hawaii Pork Patties

Recipe for delicious Hawaii pork patties done the Nordic way. These patties are popular in Denmark and have been made for many years.

Ingredients

  • 500 g ground pork
  • 100 g sun dried tomatoes in oil
  • 1 can diced tomatoes
  • 4 pineapple rings
  • 1 dl pineapple juice
  • 125 g fresh mozzarella
  • 1 tsp sugar
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • salt and pepper
Metric - US Customary

Instructions

  • Blend the diced tomatoes using a blender. Cut the sun dried tomatoes into smaller strips. Shape the ground pork into 4 thick patties. Spice the patties with salt and pepper and fry them in a hot pan for about 2 minutes. This is just to get a nice crisp crust. Put the patties in an ovenproof dish.
  • Pour the blended tomatoes in the pan you used to fry the patties. Spice with salt and pepper, sugar and oregano. Add 1 dl (1/4 cup) of the pineapple juice from the can the pineapples came in. Add the sun dried tomatoes. Heat the tomato sauce and let it boil lightly for about 5 minutes.
  • Pour the tomato sauce on top of the pork patties.
  • Cut the fresh mozzarella into slices. Put a slice of pineapple on top of each of the patties. Finish of with some mozzarella. Sprinkle some dried basil over the sauce and patties. Put the ovenproof dish in the oven at 200 C (400 F) for about 20 minutes.

Notes

Serve with boiled rice or pasta. If you want to skip some of the carbs, a simple salad is just as perfect. The last option is usually the one we go for.
