This recipe for Danish Red cabbage is a traditional and very popular side dish for many different dishes. Red cabbage is served all year around, however, it's very popular at Christmas where it's served together with the traditional Christmas eve dinner the 24th of December. In Danish we call this side dish Rødkål which translated simple means Red cabbage. We have used this recipe several times and its way better than the red cabbage you can buy at the super market. It's really simple to make and you only need five different ingredients, red cabbage, vinegar, currant juice, sugar and salt. You can easily change this recipe into a more personal dish by adding different spices according to your taste.

Normally we would use currant juice in this red cabbage, however, we have sometimes used elderberry juice instead which is just as good. [Read more...]

In this guide I would like to explain how I normally cook rice. I uses two different methods depending on the types of rice; a safe one and a fast one. I know there are several different ways and tips how to cook rice. If you have good tips please share them with me in the comment section below.

Rule of Thumb:
It is quite easy to cook rice if you follow this rule of thumb. I always use this ratio: 1 dl (2/5 cup) of rice to 1 1/2 dl (2/3 cup) of water – where I normally estimates 1 dl (2/5 cup) of rice for one person. The recipe is egg muffins with spinach and tomatoes. There are several reasons why I like these muffins a lot. It is actually really easy to make some homemade bread croutons which are great as a crisp element in a nice salad or a soup. In this recipe you only need 4-5 different ingredients; some bread, olive oil, thyme, salt and pepper. Instead of using fresh bread you can with advantage use some stale bread which has become hard and boring. We normally use dark bread with some nuts, this gives an extra delicious taste to the croutons.

Homemade croutons really give a salad an extra delicious touch. In this recipe we used thyme. However, you can try using different types of spices. You can also try using different types of bread like normal white bread or some darker with whole grains.

Danish Bread Croutons

Very easy recipe how to make roasted bread croutons which can be used as topping for salads. Bread croutons are popular topping for many Danish salads. They gives a crisp touch to the nice green salad.

Ingredients

  • 10 slices bread (You can use stale bread)
  • 6 tbsp olive oil
  • 1 tbsp dried thyme
  • salt
  • pepper

Instructions

  • Remove the crust from the bread and cut it all in into cubes.
  • Pour all the bread cubes into a large bowl.
  • Add olive oil, thyme, salt and pepper to the bowl; mix it all well. If there are still some bread cubes without oil; add some extra oil and mix again.
  • Pour the bread cubes onto a baking tray lined with parchment paper. Bake the croutons at 200 C (400 F) for about 8-10 minutes or until they are nice and crisp.
  • Let the croutons cool off before you mix them with a salad or in a soup. The ones you don't use right away; store them in an airtight container. They should last for about 14 days.

A normal Danish dinner typically consist of some kind of meat, mostly pork or beef, some potatoes, pasta or rice and maybe some bread. We will not consider ourselves super healthy people however, we do try to work out on a regular basis and combined with good food we believe that we are doing alright. With regards to our eating habits we try to avoid most of all the white and carbs-packed stuff like white bread, potatoes, pasta and rice, and then replace it with food that are rich in protein and full of good nutrients. A typical dinner for us is some kind of fried or grilled meat served together with a delicious salad. And when we are talking about salads it is almost never just a simple lettuce/tomato/cucumber-salad.

At first we wasn't sure where to use pickled red onions - but we quickly realized that they can be used everywhere where we use our cucumber salad or just normal pickles. They go perfectly as topping for burgers or hotdogs. We have also used them as a side dish for cooked pork and beef. The recipe only consist of 4 different ingredients, red onions, vinegar, sugar and some pepper, and it's so easy to make - you dissolve the sugar in the vinegar, slice the onions and let them soak in the vinegar/sugar mixture for some time and that's it!
