This is one of our most popular recipes. These caramels are just wonderful and it only takes about 10 minutes to cook up a batch of these small treats. Normally when we have made homemade caramel we would use a large saucepan to boil the caramel mixture. This process is messy, you need a thermometer and it does takes a bit of time. This recipe for microwave caramel are so much easier! From start to finish it only takes about 20 minutes.

Homemade caramel can be made in several different ways. This recipe for caramels are made in a microwave oven and you only need four different ingredients; heavy cream, light- and dark corn syrup and some sugar. The dark corn syrup gives the caramel a nice and golden color. When you have cooked and cut these caramels into small bite-sized pieces then you have some delicious homemade candy. You can also try to wrap each caramel in some parchment paper which makes them look really good.

Easy Microwave Caramels

Ingredients

  • 1 dl heavy cream
  • 1/2 dl light corn syrup
  • 2 tbsp dark corn syrup
  • 1/2 dl sugar
Metric - US Customary

Instructions

  • In a large and microwave proof bowl; Mix all the ingredients. The caramel mixture is boiling up a lot, so the bowl has to be large.
  • Microwave the bowl on full power (700W) for about 5 minutes.
  • Stir in the caramel mixture and microwave for another 2 minutes. Depending on your microwave oven; sometimes the mixture needs some extra cooking time. Test the caramel by placing a small spoon sized piece of the caramel in some ice water. The caramel should now have a nice caramel consistency. If then caramel is not done; heat the mixture for another 30 seconds and repeat the ice water test.
  • Pour the caramel mixture into a small baking dish or similar lined with some baking paper/cooking sheet.
  • When the caramel is completely cooled off; use a pair of scissors to cut the caramel into smaller pieces.
  • Wrap the caramels in cellophane or parchment paper.

Notes

During cooking the caramel is boiling up a lot. Always make smaller portions instead of one large.

We have several recipes for apple pie on our blog - this recipe for apple pie is made with marzipan and is very delicious. We think that an apple pie is best in the fall where the apples are freshly picked and full of tasteful apple juice. However, it is still very delicious all year around.

This apple pie is very simple to make. You simply just mix together the five ingredients for the pie dough, put it in a pie pan, cover it with apple wedges and finally sprinkle with a mix of cinnamon and cane sugar. Then it is baked for about 25 minutes and it is done. We normally serve it warm with sour cream or some homemade vanilla ice cream.

Ingredients

Pie

  • 125 g marzipan
  • 75 g cane sugar
  • 1 egg
  • 75 g all-purpose flour
  • 1/2 tsp vanilla powder or essence

Topping

  • 2 apples (sliced in thin wedges)
  • 2 tsp cane sugar
  • 1/2 tsp cinnamon
  • 15 almonds (chopped)
Metric - US Customary

Instructions

  • In a bowl; mix the marzipan, sugar and egg using your hands.
  • When the marzipan mixture is nice and smooth; add the flour and vanilla powder/essence, and knead.
  • Butter a rectangular or circular pie pan and distribute the dough in an even layer. The dough is a bit soft so have some flour on your hands while working with it.
  • Place the apple wedges in a nice pattern and give them a gentle push into the pie dough.
  • Mix cane sugar and cinnamon together and sprinkle over the pie and apples.
  • Coarsely chop the almonds and sprinkle them over the pie.
  • Bake the pie at 175 C (350 F) for about 20-25 minutes or until it has a nice and golden crust.

Notes

Serve the pie warm with sour cream, vanilla ice cream or whipped cream.

This recipe is another healthy cake without sugar, flour and milk. The first healthy cake we made was this healthy chocolate cake, which made us realize that you actually can make a very delicious cake without using any white sugar or flour and at the same time without compromise on the taste.

As said, this recipe for a banana cake with chocolate and dates doesn't contain any flour and milk which makes it gluten- and lactose-free. Another important factor is that it doesn't contain any refined sugar - we did use chocolate with sugar, however, if you want a completely sugar-free cake it's possible to buy sugar-free chocolate. The sweetness in this cake comes from dates and bananas which are natural sweet and are therefore a great substitute for white refined sugar. Of course dates contain a certain amount of fructose (fruit sugar). However, it's supposed to be better compared to white sugar. If you have some frozen bananas you can use them in this recipe. Instead of using regular all-purpose flour, this cake has ground almonds.

The cake is very easy and quick to make and we've tested it on friends and colleges with great success :-)

Ingredients

  • 100 g dark chocolate (or sugar-free chocolate)
  • 150 g dates
  • 200 g nuts (almonds/hazelnuts or similar nuts)
  • 2 bananas (or frozen bananas)
  • 2 eggs
  • 1 tsp baking powder
  • 1/4 tsp salt
Metric - US Customary

Instructions

  • Chop the chocolate and 50 g (2 oz) of the nuts.
  • Use a blender or food processor to ground the last 150 g (5 oz) of the nuts into a nut flour. In a large bowl, mix the ground nuts with the chopped chocolate and nuts.
  • Add baking powder and salt to the bowl and mix it all.
  • Use a food processor or blender to blend dates, bananas and eggs into a smooth batter.
  • Pour the banana batter into the bowl with the nut flour and mix it all well together.
  • Pour the batter into a 20x25 cm (8x10 inch) oven pan lined with baking paper.
  • Bake the cake at 180 C (360 F) for about 25 minutes.

This recipe for banana cake with chocolate is very delicious and easy to make. The cake is one of our most favorite and we have made it several times for both birthday parties and other special occasions. The mashed bananas, in the cake, makes the cake very moist and gives it a wonderful taste. If you have a couple of extra bananas, which are starting to get a bit overripe, you can easily use them to make this cake.

Normally if we have some overripe bananas, we use them to make this banana cake, a banana-chocolate shake or some delicious healthy banana pancakes. However, if we can't figure out what to use the bananas for, we simply just bag them and save them in the freezer - we have made a very simple guide how to do this - this way we never have to throw out bad bananas.

Ingredients

  • 3 egg
  • 150 g sugar
  • 2 tsp vanilla sugar / essence
  • 125 g all-purpose flour
  • 1 tsp baking powder
  • 100 g melted and cooled butter
  • 2 bananas mashed (use frozen bananas if you have some)
  • 50 g dark chocolate/ (or chocolate chips)

Topping

  • 100 g melted dark chocolate
Metric - US Customary

Instructions

  • Whisk egg, sugar and vanilla sugar together into a light and fluffy mixture.
  • In another bowl, mix flour and baking powder together.
  • In 3-4 steps gently mix the flour and melted butter with the batter, mix them alternately.
  • Mashed the bananas and mix them with the batter.
  • Coarsely chop the chocolate and mix it with the batter.
  • Grease a bread tin with butter or lined it with baking paper. Pour the batter into the bread tin. The volume of the bread tin should be around 1 liter (1/4 gal).
  • Bake the cake at a low position in the oven. Bake it a 175 C (350 F) for about 40 minutes.
  • When the cake is done, remove it from the bread tin and let it cool off.
  • Melt the chocolate and pour it over the cooled cake. Use a knife to spread it around.

Notes

Keep the cake in a bag - this will keep it nice and moist.

Summer time is equal ice cream time! All kinds of ice cream are amazing but in the summer time a strawberry sorbet can be a great and refreshing alternative to regular ice cream. This sorbet has a wonderful taste and has a strong and natural taste of the fresh strawberries. At the same time this sorbet has the most amazing color which makes it both tasteful and visually beautiful.

The portion of sorbet I made was not that large but it can be scaled easily to fit you needs. I made my sorbet using my ice cream maker which is able to make 1 liter of sorbet – But you can also use your freezer. This sorbet has an amazing taste and is perfect for the hot periods and is a healthy alternative to regular ice cream. Strawberry Sorbet

Easy recipe for a delicious strawberry sorbet. Fresh, tasteful and simple to make.

Ingredients

  • 500 g strawberry
  • 100 g sugar
  • 1/2 dl water
  • 2 tbsp lemon juice
  • 2 tbsp corn syrup
Metric - US Customary

Instructions

  • Mix sugar, lemon juice, corn syrup and water in a saucepan and heat it up to boiling point. Keep it boiling until all the sugar is dissolved.
  • Rinse and clean the strawberries using a bowl of water. Remove the stem using a small knife.
  • Use a regular or hand blender to blend the strawberries into a nice and smooth puree.
  • Pour in the sugar water and blend till everything is mixed.
  • Using an ice cream maker to make the sorbet. You can also use your freezer but remember to stir the sorbet every second hour to avoid ice crystals.
  • Serve the sorbet as it is or together a piece of brownie. I personally love the sorbet together with chocolate cake. You can find the recipe to my favorite chocolate cake here

In Denmark, and the Nordic countries for that matter, the nature is a real paradise in the fall if you are looking for ingredients. It's this time of the year where the apples, pears and all kinds of different berries are ripe and ready to be picked. Every year, in the fall, we go to the forest and spent hours enjoying the nature, the last sun and the nice weather before the cold winter takes over. And then we pick all kinds of fruit and berries which we later love turning into delicious food back home in our kitchen.

We normally pick elderflowers and elderberries which we use to make elderflower juice and elderberry juice both which are very delicious. If you want to be inspired with other delicious recipes, which are made based on ingredients found in the nature, then we suggest that you take a look at our recipe archive.

We absolutely recommend everybody to spend some time in the nature - if you have kids it's also a great way to spend time with them and maybe teach them about the nature.

Ingredients

Apple Cake

  • 4 eggs
  • 400 g sugar
  • 200 g butter
  • 400 g all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp vanilla powder (or essence)
  • 3 apples

Topping

  • 1 tbsp cinnamon
  • 1 tbsp sugar
  • 3 apples
Metric - US Customary

Instructions

  • Whisk egg and sugar together, using a hand mixer, into a white and fluffy mixture.
  • Melt the butter, let it cool off a bit, and slowly mix it with the egg mixture.
  • In a separate bowl, mix the flour, vanilla sugar and baking powder. If you are using vanilla essence add this in the next step.
  • Gently mix the flour and egg mixture together using a wooden spoon.
  • Peel the apples and dice them. Pour the apples into the cake batter and mix.
  • Grease a circular baking tray with butter or lined it with baking paper. Pour the cake batter into the tray.
  • For topping, peel the apples and slice them. Spread them in a dense pattern on top of the cake.
  • Mix the cinnamon and sugar together and sprinkle it on top of the apples in an even layer.
  • Bake the cake at 180 C (360 F) for about 35-40 minutes. Check if the cake is done by sticking a thin wooden stick into the cake - if it's done no cake batter will stick to the stick.

Notes

Serve the apple cake warm with some sour cream or some homemade vanilla ice cream.

Chocolate chip cookies are just the best kind of cookies you can get! Of cause we have cookies in Denmark, the rest of the Scandinavia and Europe as well, however we are not getting any close on the cookie-scale compared to the US. In the US cookies are a big thing, you can basically get them everywhere. It is even almost impossible to buy chocolate chips at the grocery stores in Denmark, you would have to buy them from special online stores - and they are really expensive. That is also why we have added an option between chocolate chips and chopped chocolate in this recipe.

As we have mentioned several times on this blog, we love to travel in the US and we always reserve an entire day just to browse the major supermarkets like Walmart. We can literally spent hours going thru all the groceries that we can find on the shelf in Denmark. And we always bring back a ton of stuff like chocolate chips. This recipe for real American chocolate chip cookies is our all-time favorite and we have made it so many times.

The cookies are crisp on the outside and has a nice soft inner core - they are absolutely super delicious! When we make the dough for these cookies we always make some extra and then save some it in the fridge or in the freezer. When you are hungry for some freshly baked cookies, then you can easily make a couple of them in almost no time.

Ingredients

  • 200 g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 150 g brown sugar
  • 150 g sugar
  • 200 g butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 340 g semi-sweet chocolate chips (one bag) (or chopped dark chocolate)

Instructions

  • Mix the flour, salt and baking powder in a large bowl.
  • Whip the sugar, butter and brown sugar using a hand mixer.
  • Add the eggs one-by-one and whip until the cookie dough is smooth and fluffy.
  • Add the vanilla extract and the flour mix and whip at low speed.
  • Add the chocolate chips or the chopped chocolate and mix well.
  • Use a spoon to make cookie dough balls. The cookie balls should be about 1/2 dl (1/4 cup) in size. Place them on a baking tray lined with parchment/baking paper.
  • Preheat the oven to 200 C (400 F) and bake the cookies for about 6-8 minutes. They must have a brownish color and still be a little soft at the center of the cookie. Take them out of the oven and let them cool off on an oven grid.

Notes

You can easily store this dough in the fridge for a couple of days - just remember to cover the bowl with some plastic wrap or aluminum foil. If the dough has been in the fridge just let rest for 10 minutes before you shape the cookies. You can also bag the dough in plastic bags and freeze them. Then you easily make some fresh cookies in no time.

As we have mentioned in many of our recipes on this blog, we love desserts and especially homemade ice cream. This recipe for homemade chocolate sauce is super easy to make and is the perfect topping for so many different desserts. We have used, with great success, this chocolate sauce as topping for our grilled bananas with vanilla ice cream, our coffee ice cream or our old fashioned pancakes.

It only takes two ingredients to make this delicious sauce, some chopped dark chocolate and some heavy cream. You simply just heat up the heavy cream in a sauce pan and add the chocolate and let it melt while stirring - it's that simple and it only takes about 15 minutes! We always try to avoid buying processed food at the supermarket, especially when the homemade version is simple to make like this chocolate sauce. Processed food normally contains a long list of different additives that are used to enhance taste and extend shelf life, which in some cases can be necessary, however, we always try to avoid it.

  • Chop the chocolate into smaller pieces.
  • Pour the heavy cream in a sauce pan and add the chocolate.
  • Melt the chocolate at low heat while stirring. Continue until the chocolate sauce has the preferred consistency.

I have to admit that, the first time I heard about the recipe and about grilled bananas I couldn't imagine that could be any good. However, the first time I tried one of these warm bananas served with brown sugar and a scoop of vanilla ice cream, I instantly changed my mind. I now think this is one of the best desserts you can cook on your grill - and the fact that it is so simple to make just make it even better. These bananas are just the perfect way of ending a nice barbecue party.

How to make grilled bananas


The instructions are super simple. You simply just put the bananas, with its peel on, on to your grill. The grill should be on low heat or on indirect heat. After about 5 minutes the bananas become completely dark on the outside. Remove them from the grill. Cut them open lengthwise, add some brown sugar in the crack and serve the hot bananas with a scoop of vanilla ice cream and some chocolate sauce. I normally always have some homemade ice cream in the freezer; I simply believe it's way better than the one you buy at the supermarket. If you have the time I think you should try making your own ice cream. I have several great ice cream recipes on this blog, try for instance this delicious chocolate ice cream, or this hazelnut ice cream with chocolate, or maybe some coffee ice cream with chocolate pieces. I normally also make the chocolate sauce my selves; however, this can be bought at the supermarked to make the dessert even easier to make.

  • 6 tbsp brown sugar
  • 6 scoops of vanilla ice cream
  • chocolate sauce

Instructions

  • Put the bananas with peel on a hot grill. If you have used charcoal to grill some food then there is normally plenty of extra heat. When the peel is starting to get brown on one side flip it over and grill it some more. Take them off when the entire peel is brown and the bananas are soft.
  • Use a knife to cut the bananas lengthwise. Pour some brown sugar in the gab.
  • Serve the hot bananas with some vanilla- or chocolate ice cream and some chocolate sauce.
