I think it is the combination between the sour taste from the rhubarb and the sweet taste from the sugar that makes this dish to fantastic. In Denmark, rhubarb is ready to be harvest in the late spring and the start of the summer. I guess fact this is similar to other countries around the world. I do grow my own rhubarb in my garden so I have a personal supply of this great fruit (yes, it is actually typically considered as a fruit). Fastelavn is a Nordic holiday celebrated on Sunday or Monday before Ash Wednesday. It has some similarities to the American holiday Halloween where children dress up in costumes and go house to house to beg for candy.It is also a tradition in Denmark to 'slå katten af tønden' - 'beat the cat in the barrel'. It is a wooden barrel that is filled with candy inside and in the old days they actually put real cats inside the barrel! The children takes turn hitting the barrel with a bat and the one that knocks the bottom out of the barrel is crowned “kattedronning” (queen of the cats). The one who knocks down the last piece of the barrel becomes kattekonge ("king of cats"). Both the king and queen gets a crown to wear. [Read more...]

These little banana pancakes are made entirely without sugar, but they are still so fantastic and sweet because of the bananas. They are a perfectly healthy alternate to normal breakfast pancakes. You can serve them with some fresh fruit and a maybe some healthy Skyr on top of the pancakes. Skyr is an Icelandic cultured dairy product, similar to strained yogurt. Recipe for homemade Danish Lemon Mousse (Citronfromage)

Lemon Mousse, or Citronfromage as it is called in Danish, is a traditional Danish dessert which has been served for many years. I am sure many elderly people remember this dessert as something they have had since they were kids. Lemon Mousse is made from eggs, whipped cream, lemon juice and gelatin. The original recipe is prepared and served in a big bowl and decorated with whipped cream. You can do that with this version and then just leave out all the topping I have made. However, I personally prefer this version where I have added a bit of a twist to the original recipe.

The recipe includes three different toppings that are served with the Lemon Mousse - and I promise you it will take the lemon mousse to a different level. This Lemon Mousse is served with a crisp rye bread tuile, a chopped walnut Croquant, some lemon balm sugar and last but not least some drained yogurt on top. Of course, you can serve this dessert completely as you like. For instance, if you can get hold of some Rye Bread, and you don't want to make it your selves (I have a great recipe for that), you can just leave this part out and maybe come up with your own topping.
