Healthy Banana Pancakes

Healthy and easy homemade banana pancakes
These little banana pancakes are made entirely without sugar, but they are still so fantastic and sweet because of the bananas. They are a perfectly healthy alternate to normal breakfast pancakes. You can serve them with some fresh fruit and a maybe some healthy Skyr on top of the pancakes. Skyr is an Icelandic cultured dairy product, similar to strained yogurt. It is very healthy, full of protein and has a thick consistency. They are great at the breakfast table, but also for a snack in the middle of the day. You can even use frozen bananas for this recipe – that is really easy!


Healthy Banana Pancakes

15 pancakes
Preparation time: 30 minutes
Danish title: Sunde banan pandekager

Ingredients:
2 ripe bananas (or frozen bananas)
3 eggs
1 dl (0.4 cup) oats
1 dl (0.4 cup) flour
1/2 tsp. salt

Instructions:
Mash the bananas. You can use a fork or a hand blender. Mix in the last ingredients and stir until the dough is homogeneous. Heat up a skillet using a little bit of oil or butter. Distribute some dough on the skillet and use a tablespoon to level it out. I was able to fit 3 pancakes in one skillet. Bake until small bubbles appear on the surface on the pancakes. Flip the pancakes over and continue the baking until they are done. The pancakes are great when they are served right from the skillet, but they are also great the day after – and can easily be reheated or eaten cold.

    Easy, tasty recipe. Great as an afternoon snack for the children and a good way to use up past-their-best bananas that are slowly going brown and being ignored. I used wholemeal flour which was fine. Next time I might try adding some raisins/sultanas to the mix for a bit of variety.

    Oh wow these look so so good, I used to make a slightly similar variation except I used to add protein powder and eat them post-workout, I think adding banana into pancakes always makes them so so delicious, so much more so than just regular pancakes!

      I think it is about 50 calories per pancake.

    Oh my God! These look gorgeous! Alhamdulillah! I don't really like bannanas and I don't think I've eaten one on it's own since I was around 5.. But they're so good for you and I'd really been wanting to enjoy them... Thanks so much for sharing this recipe and please keep sharing! : )

      Yes you can add sugar. However, I would not say that it is necessary. You get sweetness from the bananas.
