Recipe for Danish Cold Buttermilk Soup with Rhubarb

During the summer time in Denmark we have a very traditional dish which is called Koldskål. Directly translated Koldskål means Cold Bowl which probably does not make much sense. Nevertheless, Koldskål is a super popular summer dish in Denmark. It is probably the second most consumed diary product, after regular milk, during the summer and especially on the very hot summer days it is probably the most consumed dairy product. In Denmark, this refreshing summer dish is mainly sold ready-to-serve in cartons. However, making homemade Koldskål is super easy and does not require any master skill in the kitchen - I will show you how this is done further down this page. [Read more...]

Danish Smoked Mackerel on Rye Bread

Recipe for Danish Smoked Mackerel Salad

Recipe for homemade Smoked Mackerel Salad

This recipe for smoked mackerel salad is healthy, super delicious and very easy to make. In Denmark the official recommendation from the Ministry of Food, Agriculture and Fisheries is that you eat fish at least two times a week (total of 350 g - 12 oz). Fish is known to be a good source of several good nutrients and vitamins like D-vitamin, protein and fish oil.

This mackerel salad will help you comply with this recommendation. Fresh fish can at some places be difficult to get a hold of due to large distances to the ocean. In Denmark we have about 7300 km (4500 miles) of coastal line and no matter where you are the distance to the coast is maximum 1 hour by car.

This means that we have really good opportunities of getting fresh fish - so at least we can't have any excuses of not eating enough fish. We normally eat this smoked mackerel salad together with some fresh rye bread or our healthy and very delicious stone age bread. You can also serve the mackerel salad with a lettuce and a some tomatoes - then you have a lovely starter.

Frikadeller is super easy to make and they have a great taste. You simply just mix all the ingredients in a large bowl, mix well and fry the meatballs on a frying pan with oil - it is that simple.

The Secret Ingredient in Frikadeller

There are many different variants of Frikadeller, however the basic ingredients are always ground pork, onions, milk, eggs, flour and salt and pepper. Creamy Thai Soup with Ginger, Chili and Garlic (Tom Kha Gai)

Categories: Dinner/ Lunch/ Soup

Tom Kha Gai - Thai Soup with Ginger, Chili and Garlic

You can buy many different, and often actually pretty great, prepared soups from the grocery store. These prepared soups are great when you are in a hurry - they are easy to heat in a saucepan or in the microwave oven and if you throw in a couple of meatballs or boiled noodles you have a decent dish. However, in our opinion the best soups are they homemade ones. The time it takes to make a homemade soup varies a lot from the most simple tomato soup to a more advanced Chinese soup. This recipe for thai soup with ginger, chili and garlic is relatively simple to cook and it is super delicious and creamy.

I love this soup because it has many great and tasteful ingredients that are packed with great vitamins that are healthy for your body. We normally serve this soup with some fried chicken filet strips which is low on fat and rich on proteins - but the soup is also great alone. [Read more...]
