Danish Tykmælk (Danish Fat Milk)

On this page you will be able to find the old-fashioned and traditional recipe for Danish Tykmælk. Not to get confused with the Tykmælk you can buy in the Danish supermarkets nowadays - this recipe for Tykmælk is a little different and not exactly the same. This recipe I am sharing here is a kind of Danish dessert or afternoon/evening snack and only consists of two main ingredients; whole milk (~3.5%) and buttermilk. Directly translated Tykmælk means 'Fat milk' or maybe even better 'Thick milk' and is a very-thick milk soup.

As mentioned above this recipe is old and therefore, it is not made that often anymore. But it does not change the fact that it is a very delicious dish. The Tykmælk is traditionally served with brown sugar mixed with small pieces of Danish rye bread. Of course, this topping is optional.

This dish is made by mixing the two ingredients and pouring it into a warmed deep plate. Cover the deep plate with another warm plate and let it all sit someplace warm/room temperature, like next to a heater or in the sun, for 24 hours. The idea is that the two dairy products will turn into a thick pudding-like milk soup - from here the name 'thick milk'. The only issue or challenge with this recipe could be that it is designed using the dairy products, and the quality they had, back in the 60-70-ies. Back then the dairy products had more impurities and were not homogenized (fat particles typed into the same size) to the same extent they are today. In this recipe we rely on milk bacteria to form and turn the liquid milk products into this thick pudding we are looking for. Maybe the dairy products we have today are too "clean" to facilitate this process.

If you are having issues with the recipe you can we advantage try using organic products and also substitute some of the whole milk with heavy cream.

Ingredients

  • 1 l whole milk 3.5% (opt. some heavy cream)
  • 1 dl buttermilk

Topping

  • Brown sugar
  • Rye bread

Instructions

  • Mix whole milk and buttermilk
  • Pour the mixture into a deep plate which has been warmed a little. Cover the plate with another warmed plate
  • Let it all sit someplace warm/room temperature for 24 hours. After this time the mixture should have been turned into a solid pudding
  • Before serving it, let the Tykmælk cool off in the fridge for a minimum of one hour
  • Serve with a mixture of brown sugar and pieces of rye bread. You also use other toppings like fruit or jam

Even though, it is many years ago since I graduated as a mechanical engineer from the university in Copenhagen I am still seeing my old friends from the school. Every second week we meet up about 10 people from my school to eat dinner together and to have a good time. It is going on by turn, where we are meeting at each other’s homes and then we cook dinner to the rest of the group.

We have a rule that the dinner should be a two-course dinner minimum. I typically always make a two-and-half course dinner; a simple pre-snack when my guests arrive and then a main course and a dessert.

These bacon wrapped green asparagus are one of my all-time favorite pre-snacks when I am having guests over.

The perfect snack for a barbecue party

A long story short, this recipe I have listed below on this page is one of pre-snack I love to make and a snack that I know people love. They are very simple to make and it does not take that long.

You can serve these bacon wrapped asparagus as they are. I personally like to make a simple homemade dressing/dipping out of some sour cream, different herbs, some lime juice, salt and pepper. You can also serve them with a good olive oil or maybe just Ketchup - basically whatever dipping sauce you prefer.

Grill or frying pan

In the summertime, you can make these bacon wrapped asparagus on the grill in the garden. However, you can also just fry them on a frying pan in the kitchen. This is up to you.

Water soaked wooden sticks

I normally use wooden sticks to secure the bacon around the green asparagus.

You can also use steel meat needles. However, I just think the wooden sticks or toothpick are a better choice. It just looks better somehow.

Basically, it is up to you. If you decide to use wooden sticks, it is a good idea to soak the sticks in water for about 20-30 minutes. This way you reduce the risk that the sticks will burn if you are cooking these bacon asparagus on a charcoal grill in the garden.

Ingredients

  • Green asparagus
  • Strips of bacon

Instructions

  • Rinse the asparagus under cold water. Dry them a little using some paper towels.
  • Cut each asparagus into three pieces.
  • Depending on the size/length of the bacon, cut them into smaller pieces. The bacon should be able to be wrapped around the green asparagus about 1-1.5 times.
  • Now wrap each asparagus with the bacon. Secure the bacon with a toothpick or other wooden sticks. It is a good idea to soak the wooden sticks in water for about 20 minutes. This prevents the sticks from burning that easily which grilling those on the frying pan or on the grill.

These sugar roasted almonds are a real classic Christmas snack and in Denmark they are sold in every mall and street corner where hungry Christmas shoppers are looking for a quick and delicious snack. Typically the roasted almonds are cooked and sold from small cooking karts which has one or two large saucepans, where the almonds are roasted in sugar, and a small table where the almonds are packed in plastic bags. A bag containing about 200 g (7 oz) are sold for about 3-4 USD and if they are still a little hot when you buy them, they are super delicious.

In Denmark this snack are more or less only made in the Christmas period, however, we don't understand why - they are very delicious and easy to make so why not just serve they all year around? Of course if we had them all the time it wouldn't a great Christmas tradition to make them.

How to make Danish sugar roasted almonds


In order to make these sugar roasted almonds you only need three different ingredients, almonds, sugar and water - all ingredients which most households always have on the shelf. The almonds are very easy to make and it only takes about 20 minutes to make one serving of this delicious snack. We have served this snack for both our friends and family and they all loved them. We have also used these almonds as a hostess gift.

Nordic Sugar Roasted Almonds

This recipe is a traditional way of roasting almonds in the Nordic countries and especially in Denmark. Easy to follow and the result is very delicious. Typically served around December and Christmas in Denmark.

Ingredients

  • 200 g almonds
  • 200 g sugar
  • 3/4 dl water
Metric - US Customary

Instructions

  • Pour the almonds, sugar and water in a large saucepan. Heat up the pan at medium heat.
  • The water and sugar will start to boil and become a syrup. Stir and turn the almonds constantly.
  • Keep boiling the water and sugar until all the water is evaporated and the sugar starts to get solid and powdery again.
  • Now the sugar should start to melt slowly. When that happens turn down the heat a little bit. Stir in the almonds constantly. Don't let the sugar melt too much or it won't stick to the almonds.
  • When all the almonds have a nice, thin and brown layer of sugar all over, pour all the almonds onto an oven tray lined with parchment/baking paper.
  • Use a fork to separate the almonds from each other so that they don't stick together when they are cooled.
  • Let the almonds cool off and keep them in a glass jar.

Notes

Sometimes it can be a little difficult to hit the right heat balance - If you don't heat the sugar and almonds enough the sugar will stick to the almonds in larger chunks and if you overheat the sugar it won't stick to the almonds. Our advise is to slowly heat up the sugar mixture so that you can control the process. Look at the pictures below where you can see how the sugar mixture should look like.

This is one of our most popular recipes. These caramels are just wonderful and it only takes about 10 minutes to cook up a batch of these small treats. Normally when we have made homemade caramel we would use a large saucepan to boil the caramel mixture. This process is messy, you need a thermometer and it does takes a bit of time. This recipe for microwave caramel are so much easier! From start to finish it only takes about 20 minutes.

Homemade caramel can be made in several different ways. This recipe for caramels are made in a microwave oven and you only need four different ingredients; heavy cream, light- and dark corn syrup and some sugar. The dark corn syrup gives the caramel a nice and golden color. When you have cooked and cut these caramels into small bite-sized pieces then you have some delicious homemade candy. You can also try to wrap each caramel in some parchment paper which makes them look really good.

Easy Microwave Caramels

Ingredients

  • 1 dl heavy cream
  • 1/2 dl light corn syrup
  • 2 tbsp dark corn syrup
  • 1/2 dl sugar
Metric - US Customary

Instructions

  • In a large and microwave proof bowl; Mix all the ingredients. The caramel mixture is boiling up a lot, so the bowl has to be large.
  • Microwave the bowl on full power (700W) for about 5 minutes.
  • Stir in the caramel mixture and microwave for another 2 minutes. Depending on your microwave oven; sometimes the mixture needs some extra cooking time. Test the caramel by placing a small spoon sized piece of the caramel in some ice water. The caramel should now have a nice caramel consistency. If then caramel is not done; heat the mixture for another 30 seconds and repeat the ice water test.
  • Pour the caramel mixture into a small baking dish or similar lined with some baking paper/cooking sheet.
  • When the caramel is completely cooled off; use a pair of scissors to cut the caramel into smaller pieces.
  • Wrap the caramels in cellophane or parchment paper.

Notes

During cooking the caramel is boiling up a lot. Always make smaller portions instead of one large.
