Bruschetta is a little and very delicious snack which is great as a starter or maybe as a side dish for a nice main course. The original and traditional Bruschetta consist of a slice of grilled bread topped with a mixture of garlic, chopped tomatoes, olive oil, salt and some pepper. The old and original Bruschetta are from Italy and is still a very popular dish many places.
In this recipe we have replaced the traditional tomato and garlic Bruschetta with an avocado topping. We both love avocado which is why we think these avocado Bruschetta are wonderful. We have typically served these Bruschetta as an element in a tapas dinner. We have collected some of our best tapas recipes in this recipe archive.
Tomato & Avocado Bruschetta

Ingredients:
10 slices of Ciabatta bread
1 large avocado or 2 small
1/2 red onion, finely chopped
1/2 lime, the juice
10-15 cherry tomatoes or equivalent in large tomatoes
Salt
olive oil
Instructions:
1. In a bowl; mix the avocado, finely chopped red onions and the juice from 1/2 a lime. Add salt to taste.
2. If you are using cherry tomatoes, cut them in halves. Regular sized tomatoes are cut in smaller pieces.
3. Cut about 10 slices of a Ciabatta bread and place them on an oven grid. Bake the bread for about 2-3 minutes at about 200 C (400 F). They should just become a little crisp on the outside.
4. Let the bread slices cool off a bit. Use a knife to spread some of the avocado mixture on the bread and decorate with some the cut tomatoes. Finally add a couple of drops of olive oil.
