A normal Danish dinner typically consist of some kind of meat, mostly pork or beef, some potatoes, pasta or rice and maybe some bread. We will not consider ourselves super healthy people however, we do try to work out on a regular basis and combined with good food we believe that we are doing alright. With regards to our eating habits we try to avoid most of all the white and carbs-packed stuff like white bread, potatoes, pasta and rice, and then replace it with food that are rich in protein and full of good nutrients. I have once heard that if you add a slice of pineapple on top of food it automatic gets 'Hawaii' in its name - I have no idea where this concept is from but I like it! The sour and sweetness in a pineapple just goes perfect with so many things. In this page I have posted my favorite recipe on Hawaii pork patties in tomato sauce with mozzarella and basil. This dinner is easy to prepare - it only takes about one hour. The fact that the pork patties are cooked in an oven in a layer of nice tomato sauce makes them really juicy and delicious. The recipe is low on carbs and has a high protein content which makes this a healthy dinner. If you have never tried pineapples like they are used in this recipe, you should differently try it out.

Hawaii Pork Patties

Recipe for delicious Hawaii pork patties done the Nordic way. These patties are popular in Denmark and have been made for many years.

Ingredients

  • 500 g ground pork
  • 100 g sun dried tomatoes in oil
  • 1 can diced tomatoes
  • 4 pineapple rings
  • 1 dl pineapple juice
  • 125 g fresh mozzarella
  • 1 tsp sugar
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • salt and pepper
Metric - US Customary

Instructions

  • Blend the diced tomatoes using a blender. Cut the sun dried tomatoes into smaller strips. Shape the ground pork into 4 thick patties. Spice the patties with salt and pepper and fry them in a hot pan for about 2 minutes. This is just to get a nice crisp crust. Put the patties in an ovenproof dish.
  • Pour the blended tomatoes in the pan you used to fry the patties. Spice with salt and pepper, sugar and oregano. Add 1 dl (1/4 cup) of the pineapple juice from the can the pineapples came in. Add the sun dried tomatoes. Heat the tomato sauce and let it boil lightly for about 5 minutes.
  • Pour the tomato sauce on top of the pork patties.
  • Cut the fresh mozzarella into slices. Put a slice of pineapple on top of each of the patties. Finish of with some mozzarella. Sprinkle some dried basil over the sauce and patties. Put the ovenproof dish in the oven at 200 C (400 F) for about 20 minutes.

Notes

Serve with boiled rice or pasta. If you want to skip some of the carbs, a simple salad is just as perfect. The last option is usually the one we go for.

In the summertime our grill is used regularly, there is just something great about preparing food in a grill. You get this particular grill taste to the food and the entire area has this nice grill smell. Whether your are in your backyard, on your apartment balcony or at the beach, food made on a grill is just great. In this page I have listed one of my favorite grill recipes, small grilled chicken meatballs on wooden sticks.

These meatballs are very simple and easy to prepare and goes perfectly together with some bread and a salad. This dish is very healthy and can be made in under one hour. The small meatballs are loved by kids and are great as a pre-snack if you are waiting for the main dish to be done.

If you do not own a grill you can fry the chicken meatballs in a saucepan or in the oven.

Grilled Chicken Meatball

Ingredients

  • 400 g ground chicken
  • 1 egg
  • 1 onion (chopped)
  • 1/2 dl all-purpose flour
  • 1/2 dl bread crumbs
  • 1 dl grated parmesan
  • salt
  • rosemary
  • chili powder
Metric - US Customary

Instructions

  • Place the wooden sticks in a bowl of water (15-20 minutes). This will prevent the sticks from burning when you grill the chicken meatballs.
  • Mix all the ingredients in a large bowl. Add some salt, rosemary and chili powder as your prefer.
  • Shape the meat into 30 small balls and put 3-4 balls on each wooden stick.
  • Grill the meatball sticks approximately five minutes on two sides. You can also fry the meatballs on a saucepan or in the oven.

Notes

Serve the meat balls with a salad and some sweet-chili sauce

I am completely in love with pulled pork. I normally make pulled pork out of 4-5 kg (9-11 pounds) pork and then I just freeze the prepared meat in small plastic bags. Then I can take it out of the freezer in the morning and reheat it for dinner in the evening. Simple and super delicious! After having had so must pulled pork I decided to try out pulled chicken. In this page I describe how you can make healthy and tasteful pulled chicken. The great thing about pulled chicken is that it is not that difficult and time consuming to make compared to pulled pork, at least if you follow my recipe.

The cooking time of the chicken fillets is only about 3 hours compared to 10-15 hours for pulled pork. However, you get the best result if you marinade the chicken fillets overnight to make sure all the nice spices kicks in. The marinate step can be skipped if you are in a hurry.
Because pulled chicken is made out of chicken fillets it is a very healthy alternative to regular pulled pork which has a larger amount of fat and calories. You can choose to serve the pulled chicken with homemade burger buns or maybe in a homemade flour tortilla. In both cases the chicken goes great with coleslaw.

Ingredients

  • 3 chicken fillets

Marinade

  • 4 tbsp olive oil
  • 2 tbsp ketchup
  • 1 tbsp honey
  • 1 tbsp white wine vinegar
  • 1 tbsp paprika
  • 1 tsp onion powder
  • 1 tsp liquid smoke (optional)
  • 2 tsp salt
  • 2 tsp garlic powder

Instructions

  • Mix all the ingredients for the marinade.
  • Put the chicken fillets on a piece of aluminum foil and place them in a baking dish.
  • Pour the marinade on top of the fillets.
  • Use the extra aluminum foil to wrap around the fillets and put the them in the fridge for a couple of hours or preferred overnight. If you are in a hurry simply skip this step.
  • Put the chicken in the oven at 150 C (300 F) for about 15 minutes. Turn down the heat to 110 C (230 F) and let the chicken cook for about 3 hours.
  • After the 3 hours take out the chicken and use two forks to pull the meat into small pieces.
  • Serve the pulled chicken with some freshly baked burger buns and some coleslaw.
