You have probably heard it before - Breakfast is the most important meal of the day. I personalty make an effort in always trying to make myself a decent breakfast meal. On the weekdays it normally consist of healthy grains, proteins and vitamins. In the weekends it is freshly baked bread with homemade jam. Recipe for Danish Birthday Buns

A traditional birthday party in Denmark is properly not that different from birthdays all over the world. It is all about getting together with friends and family, cooking some great food and then just having a good time. A birthday is not something you celebrate every day so it is alright to spend some extra time making it something special. When we are celebrating a birthday in our family the food is a big and important element - it has to be the best. This recipe for the perfect birthday buns are simple to make and super delicious. These buns are just competently ordinary and classic buns made from plain flour, butter and some sugar. They are certainly not the most healthy buns you can make but they are super delicious and that is what matters when you are celebrating a birthday.

When we are preparing for a birthday party we always have a thousand things to do before the guests arrive. These buns can easily be made days in advance and frozen in plastic bags - before serving you just reheat the buns at low heat in the oven. Then you have super delicious buns that are almost as they were freshly baked. We will recommend serving these buns with some homemade strawberry and rhubarb jam which is simple to make and real delicious.

Danish Birthday Buns

Easy recipe for traditional Danish birthday buns. These birthday buns are of course typically served for breakfast for birthdays in Denmark together with hot cocoa.

Ingredients

  • 6 dl milk
  • 50 g fresh yeast
  • 1 kg all-purpose flour
  • 4 tsp salt
  • 4 tbsp sugar
  • 75 g butter
  • 1 egg

Instructions

  • Heat the milk to a lukewarm temperature and dissolve the yeast in it. Add sugar and salt and stir well until both ingredients are completely dissolved.
  • Melt the butter, let it cool off a bit and slowly add it to the milk while stirring.
  • Stepwise add the flour while stirring. When the consistency of the dough gets thick use your hands to knead. The amount of flour needed depends on the quality of the flour.
  • Cover the bowl with a kitchen towel and leave it for raising for about an hour someplace warm.
  • Divide the dough into 20 smaller pieces and roll them into buns. Place the buns on a baking tray lined with parchment/baking paper. Let the buns rise for another 30 minutes.
  • Brushed the buns with a beaten egg/egg wash. This will add a beautiful light-brown color to the buns.
  • Preheat the oven to 200 C (400 F). Bake the buns at the center position in the oven for about 10-12 minutes.

Notes

Serve the buns with some homemade strawberry and rhubarb jam. This recipe for homemade jam only has four ingredients, it is easy make and super delicious!

We have heard about cauliflower pancakes several times and we have to confess it did not sound like something we would like. However, one day we had an extra cauliflower in the fridge, and we always try to avoid throwing out food, so we decided to try out the cauliflower pancakes - and we are glad that we did!

Cauliflower pancakes are pretty famous in the food blogging world, mostly because they are healthy and easy to cook, but also because they are very delicious. These pancakes go perfectly for each meal a day - breakfast, lunch, dinner or maybe just as a snack.

We would also like to recommend our healthy pancakes with oats and apples, and our famous healthy pancakes with banana - both recipes are healthy and super delicious!

Danish Cauliflower Pancakes with Parmesan

Healthy and delicious cauliflower parmesan pancakes. These pancakes are a perfect and healthy alternative to regular pancakes. Serve as breakfast or an afternoon snack.

Ingredients

  • 350 g cauliflower
  • 2 tbsp grated Parmesan
  • 2 eggs
  • 2 tbsp chickpea flour (or all-purpose flour)
  • 2 tbsp whole-wheat flour

Instructions

  • Divide the cauliflower into smaller florets and fine chop them in a food processor.
  • Mix the chopped cauliflower with the grated Parmesan, eggs, flour. Mix it all well.
  • Heat up some oil in a frying pan and pour on two tbsp. of the pancake dough. Fry them for a couple of minutes on each side.

In the weekends we love to sleep in and wake up and make some delicious breakfast/brunch. We prefer if it is not too unhealthy and always end up making some healthy banana pancakes or these pancakes with oats and apples - both are super delicious! Then we usually serve the pancakes with some rye-bread or our healthy homemade stone-age-break which is full of nuts and free of sugar and flour. Together with some fresh fruit and maybe some scrambled eggs you have an great and healthy breakfast.

The recipe for these pancakes with oats and apples are easy to make and they can be used for both breakfast and lunch or maybe an afternoon snack. I you want to save time in the morning, when you wake up hungry, you can make the pancake dough the day before and then just fry them in the morning. If you want some even healthier pancakes you can leave out the sugar and then add some sweetener.

Ingredients

  • 1 dl oats
  • 2 dl water
  • 2 apples
  • 2 eggs
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 3 tbsp whole-wheat flour (or spelt flour)
  • 1 tbsp all-purpose flour
  • 1/2 dl milk

Instructions

  • Mix the oats and water in a bowl and use the microwave oven to make an oatmeal (about 2 minutes). I you do not have a microwave oven you can use a saucepan. Boil until you have a smooth porridge.
  • Peel the apples and grate them.
  • Mix the oatmeal with the rest of the ingredients.
  • Heat up a frying pan with some oil. Pour on some pancake dough and use a knife to even it out a bit. The thickness of the pancakes depends on your preferences.
  • When the surface of the pancakes starts to bubble flip them over and fry until they are done.

Notes

Serve the pancake as breakfast or just as an afternoon snack. They go great together with some fresh berries like raspberries and blueberries. Enjoy!

We love bread, and in the weekends we almost always have it for breakfast. We never buy bread or buns from the grocery store, simply because freshly homemade bread are super simple to make and the taste is just much better. We live in the city and have several good shopping possibilities nearby - we still believe it is fast to mix our own dough and shape it into buns than go and get some from the store. Of cause buns from the store does not have to raise, but the time you have to work is less if you make your bread yourself. If we want to make it even easier for ourselves in the morning we make the dough the evening in advance using less yeast than normal, and then let it raise in the fridge overnight. I have heard that the breakfast is the most important meat during the day - I am not sure whether it is correct but I cannot last until lunch without any food. Having one of the many fancy cereal products for breakfast, which is typically packed with white sugar, is properly not the best start you can give your body in the morning. For a long time I have had a natural and sugarless yogurt topped with a crunchy chocolate-coconut granola for breakfast. It is very tasteful and the yogurt is rich on protein and has low carbs content. For a long time I bought the topping, chocolate granola, at my local grocery store. One day I decided that I had to try make my own granola, and I am glad I did - This recipe, on homemade granola, gives you a very crunchy granola with a delicious chocolate taste. I primarily use this chocolate-coconut granola as topping for my breakfast. But it is also great as a snack or maybe as ice cream topping for dessert. [Read more...]
