Danish Cauliflower Pancakes with Parmesan
Healthy and delicious cauliflower parmesan pancakes. These pancakes are a perfect and healthy alternative to regular pancakes. Serve as breakfast or an afternoon snack.

cauliflower

tbsp
grated Parmesan
2
eggs
2
tbsp
chickpea flour
(or all-purpose flour)

tbsp
whole-wheat flour

Instructions
Divide the cauliflower into smaller florets and fine chop them in a food processor.
Mix the chopped cauliflower with the grated Parmesan, eggs, flour. Mix it all well.
Heat up some oil in a frying pan and pour on two tbsp. of the pancake dough. Fry them for a couple of minutes on each side.
