Hi Wen. Yes you can leave the dough in the fridge for 8-12 hours. In this case you just need to reduce the amount of yeast a little bit. Otherwise, it will rise too much. I would go for about 1/2 the amount of yeast which is already stated in the ingredient list. I hope it will turn out good. Regards Kim (NordicFoodLivng.com)

HI Kim, I made this bread tonight. Thanks for the yeast link. I use 25x.33=~9g of instant dry yeast. Everything followed your steps and worked smoothly. Although I couldn't make the braid nicely like yours, I had a lot of fun when making this bread. I will wait for tomorrow morning to taste it. I know I would love it. Again, this is another one I like from your recipes. Thank you!

I very rarely use dry yeast so I'm not that familiar with it. However, everytime I have to use dry yeast I need to Google the conversion :-) I normally use this conversion found on King Arthur Baking . I hope that you can use this conversion. Regards Kim (NordicFoodLiving.com)
