This recipe for a healthy banana and chocolate shake is the reason that you should always have a few bananas in your freezer. When we have some bananas that are starting to get a little soft and brown at the edges, we never throw them out like most people would do.

This recipe for a shake with bananas and chocolate is super delicious, it only consist of four different ingredients and it takes about 5 minutes to make!
We just peal the ripe bananas, bag them in a plastic bag and freeze them so that they can be used at a later point - and by that saves some money from buying new ones. A frozen banana can be used for many different things like these healthy homemade banana pancakes - they are one of our most popular recipes.

The frozen bananas gives the shake a nice, smooth and cold consistency and the cocoa gives it a delicious chocolate taste and color. If you want to add more sweetness to the shake think about adding a table spoon of date syrup or honey.
This shake is perfect to be served right after a workout at the gym or maybe just as an late afternoon drink before dinner. When you have tried this shake, or the banana pancakes, you will never throw out bananas any more just because they are a bit brown, you will save them in the freezer.

Preparation time: 30 minutes
Danish title: Sunde banan pandekager
Ingredients:
2 ripe bananas (or frozen bananas)
3 eggs
1 dl (0.4 cup) oats
1 dl (0.4 cup) flour
1/2 tsp. salt
Instructions:
Mash the bananas. You can use a fork or a hand blender. Mix in the last ingredients and stir until the dough is homogeneous. Heat up a skillet using a little bit of oil or butter. Distribute some dough on the skillet and use a tablespoon to level it out. I was able to fit 3 pancakes in one skillet. Bake until small bubbles appear on the surface on the pancakes. Flip the pancakes over and continue the baking until they are done. The pancakes are great when they are served right from the skillet, but they are also great the day after – and can easily be reheated or eaten cold.

Sometimes we are just craving for something delicious dessert but we don't want all the sugar and empty calories. This is a recipe for a delicious banana ice cream which is a really great alternative to regular ice cream. This banana ice cream does not contain any sugar or heavy cream - it only contain one ingredient; bananas. The ice cream has a nice and creamy consistency which is similar to sorbet ice cream. If you prefer the consistency of regular ice cream you simply just refreeze it after you have made it. Will like to serve this ice cream will some chopped dark chocolate as topping.
We normally always some bananas in our home which we eat as healthy snacks between meals or after a workout. Sometimes, we have bought too many bananas or forgot to eat them and then they get overripe. Instead of throwing them out we cut them into smaller pieces and keep them in the freezer. These frozen bananas are great for many thing - we have actually made a small guide about frozen bananas.

Ingredients:
2 ripe bananas
dark chocolate for topping (optional)
Instructions:
1. Cut the bananas into slices and freeze them in a bag or small container. They should be in the freezer for about 2 hours or until they are completely frozen or hard. You can with advantage do this some days in advance.
2. Pour the frozen banana pieces in a food processor or blender and blend them until the consistency is nice and smooth. First the bananas get turned into a powder, just continue blending and you will get a nice ice cream.
3. Serve the ice cream as it is or put it back in the freezer and the consistency will become more like a regular ice cream. Then you can also make nice ice cream scoops.

I want to share one of my absolutely favorite recipes. This recipe for banana-oat cookies is super easy to make and you only need those two ingredients; banana and oats. These cookies, if you can call them that, literally only takes 20 minutes to make. The great thing about them is that they are very healthy and filling so it is great snack in between the main meals. Each cookie has less than 100 calories so you can, with no problems, grab a couple of them.
Great for Travel
I got this recipe from a friend of mine and it instantly became a hit. I do a lot of traveling with my job and I always find it bit difficult to find both good and healthy food in airports and in cities you don’t know. Especially, if you are in a bit of a hurry it is, unfortunately, too easy to grab some food from fast food restaurants. After I discovered this recipe I always bring a box with 10 or more cookies. Then I eat a couple of them from time-to-time so that I don’t run out of energy.
The Recipe
As said, it only takes about 20 minutes to make a batch of these cookies. The basic recipe contains banana and oat. However, I always add all kinds of different extra stuff to make them extra delicious. I can recommend some of the followings below. However, I will encourage you to come up with your own: If you find a great ingredient, please let me know in the comments below.
1. Chocolate chips
2. All kinds of chopped nuts (almonds, walnuts, hazelnuts)
3. All kinds of dried fruits (cranberries, blueberries, raspberries)
The instructions are super simple. You simple just mix the banana and oats in a large bowl and add the different filling you like. Using a table spoon; then you transfer small cookies onto a parchment paper covered oven sheet. Bake the cookies for about 10 minutes and then they are done. It is that easy.

Instructions:
1. In a large bowl; use a fork to mix together banana and oats into a sticky dough.
2. Add all kinds of different fillings like chocolate chips, chopped almonds, coconut flakes and so on.
3. Using a table spoon to make small banana-oat cookie. Place them on a parchment paper covered baking sheet.
4. Bake the cookies for about 8-12 minutes at 175 C (350 F).
Tip: Keep the cookies in a closed container for some days. You can also store them in your freezer for later.

It takes about 30 minutes to cook of a batch and the preparation time is only about 10 minutes. We normally use they as a snack in our lunch pack. They are also great in the afternoon when you are hungry and you haven't even started cooking dinner. If you want a different variant of these cookies we can recommend trying to substitute the chocolate with raisins or chopped nuts, like almonds or hazelnuts. One cookie contain about 50 calories.

Preparation time: 10 minutes
Total time: 25 minutes
Ingredients:
1 ripe banana
1 dl (2/5 cup) oatmeal (oats)
20-25 g (½-1 oz) dark chocolate, chopped (or chocolate chips)
Instructions:
1. Peel the banana and mix it together with the oats.
2. Add the chopped dark chocolate and mix again. You can also use chocolate chips if you are lucky to live in a country where you can buy them.
3. Use a tablespoon; shape small cookies and place them on an oven plate lined with parchment paper.
4. Bake the cookies at 175 C (350 F) for about 12-15 minutes.
About 50 calories per cookie

When it comes to dessert we normally like to make some kind of cake or some homemade ice cream. However, when we want to make something special we make a fruit salad with all kinds of different fruit, the more the better. This recipe for a simple fruit salad with vanilla cream and chocolate pieces is one of our all-time favorites. It is easy to make and super delicious! We have never met anybody who does not like it. Because it is possible to clean and cut out some of the fruit, and store it in the fridge for some time, it is very convenient when you are having guests - in this case we are always busy with all kinds of different work, then it is nice to be able to prepare the dessert in due time.
The vanilla cream is made out of 4 simple ingredients, egg yolks, sugar, heavy cream and a vanilla bean, and it gets really light and fluffy, exactly as an vanilla cream should be. The vanilla cream goes perfectly together with the fruit salad with chocolate pieces, but it can also be used for many other desserts. We can highly recommend serving this vanilla cream with our super delicious homemade strawberry pie or just any kinds of berry-pies.

Ingredients:
Fruit Salad:
1 pomegranate
2 oranges
500 g (1 lb) grapes (both green and blue)
3 bananas
1 apple
2 pears
150 g (5 oz) dark chocolate
Vanilla Cream:
3 egg yolks
3 tbsp sugar
2.5 dl (1 cup) heavy cream
1 vanilla bean
Instruction:
Fruit Salad:
Step 1: Break out all the seeds from the pomegranate and rinse and clean the grapes. Peal the oranges and cut them into small pieces. Peal the bananas, split them and cut them into half slices. Wash the apples, remove the core and dice them - do the same with the pears.
Step 2: Mix all the prepared fruits in a large bowl.
Step 3: Chop the chocolate into small pieces and mix it with the fruits. Store all of it in the fridge until serving. It is always nice to serve the fruit salad with some extra chocolate, so prepare a small bowl with chocolate.
Vanilla Cream:
Step 4: Whip the egg yolks, sugar and the seeds from the vanilla bean unto a light cream.
Step 5: In a different bowl whip the heavy cream into a whipped cream.
Step 6: Gently mix the egg yolk mixture with the whipped cream. Now you a have delicious vanilla cream.
Tip: Serve the fruit salad with the vanilla cream. If you are having guests and want to cut out the fruit in advance then wait with the apples and bananas, they tend to get slightly discolored. The rest can be prepared in due time.
