Nordic One-pot Edamame Beans Broccoli Noodle Green Curry

Very easy-to-make and healthy Nordic recipe for a one-pot dish with edamame beans, fresh broccoli, noodles all together in a creamy coconut green curry sauce. Done in 30 minutes!

Ingredients

  • 200 g noodles
  • 1 tbsp green curry paste
  • 1 onion (diced)
  • 3 clove garlic (minced)
  • 1/2 broccoli
  • 1/2 pointed cabbage (finely shredded)
  • 2 large carrots (julienne)
  • 2 dl edamame beans (without shell)
  • 4 dl vegetable stock
  • 1 can coconut milk
  • 1 tbsp soy sauce

Topping

  • lime juice (freshly squeezed)
  • fresh cilantro
  • shredded coconut (unsweetened)
  • salted peanuts

Instructions

  • Precook the noodles in lightly salted water. Remove the noodles from the water 2 minutes before they are done.
  • Dice the onion and mince the garlic. On a frying pan with hot oil, add the onions, garlic and green curry paste. Fry the ingredients for a couple of minutes.
  • Peeled and cut the carrots julienne (smaller pieces). Rinse the broccoli and break into smaller pieces. Finely shred the cabbage. Add all three ingredients to the frying pan. Fry for another five minutes.
  • Add edamame beans (shelled), coconut milk, vegetable stock, soy sauce, the precooked noodles and salt and pepper to taste. Let everything simmer for about 5 minutes.
  • Served topped with freshly squeezed lime juice, fresh cilantro and salted peanuts.

This Nordic inspired recipe for one-pot chickpea coconut zucchini curry is for sure one on my top-5 list of healthy vegetarian recipes - it is simple to make, very tasteful and it only takes about 45 minutes to cook.

So this recipe is absolutely really great if you are trying to live a healthier lifestyle but also if you are a busy person with little time to cook.

What I really like about this dish, besides that it is super tasteful and delicious is that it is super easy to make. It is basically just adding all the prepared ingredients in a large saucepan and simmering it for 30 minutes. When thinking about it - have I told you how much I love food that cooks it by itself? I love healthy fast food!

Ingredients

  • 2 red onions (diced)
  • 2 cloves garlic (minced)
  • 1 tbsp curry powder
  • 1 1/2 tsp cayenne pepper
  • 2 large carrots
  • 1 zucchini
  • 1 can chickpeas (cooked and drained)
  • 1 can coconut milk
  • 1 can crushed tomatoes
  • 1.5 dl red lentils
  • 2.5 dl vegetable stock
  • cilantro (optional topping)
  • spring onions (optional topping)

Instructions

  • In a large pan, fry the diced onions and minced garlic together with the spices. Fry for a couple of minutes.
  • Add drained and cooked chickpeas, coconut milk, crushed tomatoes, vegetable stock and red lentils. Let the curry simmer for about 20 minutes or until the lentils are almost cooked.
  • Peel and julienne the carrots. Cut the zucchini into smaller pieces. Add to the frying pan and cook for another 10 minutes.
  • Add salt and pepper to taste.

Notes

Serve together with cooked rice or naan bread. Topped with fresh cilantro or spring onions.

These rye buns with chocolate pieces are both healthy and very delicious at the same time. We personally love them as a little snack in-between two meals or as a healthy dessert for our lunch. In Denmark these buns are similar to the Chokorug which are sold at the very famous Lagkagehuset. Lagkagehuset is a Danish chain of bakeries which are selling traditional and modern bread and cakes. The chocolate buns are filled with healthy grains and delicious dark chocolate - if you heat them up a little they become even better. The recipe is actually pretty easy to follow. However, it does require a bit of preparation. These buns are based on a sourdough, which gives the bread a great dense and chewy texture with a crisp crust. Danish Chocolate Rye Buns

Very delicious and famous Nordic Chocolate rye buns. These buns are very popular at the famous Danish bakery called Lagkagehuset. The buns are easy to make and perfect for lunch or a snack.

Ingredients

  • 400 g sourdough (find recipe on NordicFoodLiving.com)
  • 4 dl cold water
  • 150 g chopped/cracked rye grains
  • 100 g sunflower seeds
  • 100 g pumpkin seeds
  • 100 g all-purpose flour
  • 1/4 tbsp salt
  • 1 tbsp malt syrup (may be omitted)
  • 2 tbsp cocoa powder
  • 250 g rye flour
  • 200 g dark chocolate (70%) (or chocolate chips)
  • 100 g almonds (for topping)

Instructions

Before start

  • Before you can start this recipe; make sure you have a good sour dough. You can follow my recipe I have here on NordicFoodLiving.com.

Day 1

  • In a bowl; mix the cold water with chopped rye grains, sunflower- and pumpkin seeds. Cover the bowl with a lid or a dish towel; Leave the bowl on the kitchen table for about 12-24 hours.

Day 2

  • Drain the soaked seeds/grains.
  • Mix the soaked seeds/grains with the sourdough, salt, malt syrup (may be omitted), all-purpose flour, rye flour and cocoa powder. Mix all the ingredients into a nice dough.
  • When all the ingredients, in step 3, are mixed well together; add the chopped dark chocolate / chocolate chips. Mix again. The dough should be firm but still sticky.
  • Make 20-22 buns out of the dough and place them on a parchment-paper covered oven tray.
  • You can decorate the buns with chopped almonds. However, this can be skipped.
  • Cover the buns with a clean dish towel and let them raise someplace warm for about 1 hour.
  • Bake the buns at 180 C (360 F) for about 20-25 minutes.

Notes

Keep the baked buns in an air tight plastic bag or container.

Homemade Healthy Banana and Chocolate Shake

This recipe for a healthy banana and chocolate shake is the reason that you should always have a few bananas in your freezer. When we have some bananas that are starting to get a little soft and brown at the edges, we never throw them out like most people would do.

Use frozen banans to make a healthy Banana shake

We just peal the ripe bananas, bag them in a plastic bag and freeze them so that they can be used at a later point - and by that saves some money from buying new ones. A frozen banana can be used for many different things like these healthy homemade banana pancakes - they are one of our most popular recipes.

The frozen bananas gives the shake a nice, smooth and cold consistency and the cocoa gives it a delicious chocolate taste and color. If you want to add more sweetness to the shake think about adding a table spoon of date syrup or honey.

Recipe for Homemade Red Cabbage Salad with Oranges and Pomegranate

If you have read some of the other recipes on our blog, you would know that we normally try to avoid carbs from white bread, pasta, potatoes etc. and replace it with salads. This salad with red cabbage, oranges and pomegranate is another salad that we like to make. The salad is perfect as a side dish for most meat and it has a wonderful taste.

The red cabbage brings a fresh and crisp feeling to the salad - it's just great. In Denmark red cabbage is a popular vegetable and it's especially used to make the famous Danish Red Cabbage which is a very popular side dish for many Danish Christmas dinners. Red cabbage is rich on vitamin A and C, and is very filling - a great and healthy salad.

We would also like to recommend our coleslaw with red cabbage and apples, which is another great salad.

Red Cabbage Salad with Oranges and Pomegranate

4 people
Preparation time: 30 minutes
Danish title: Rødkålssalat med appelsin og granatæble
Cuisine: Danish

Ingredients:
1/4 red cabbage
1 pomegranate
1 apple
1 large orange (or 2 small)
50 g (2 oz) walnuts
1 tbsp honey
2 tbsp balsamic
3 tbsp olive oil
pinch of salt and pepper

Instructions:
Step 1: Cut the red cabbage finely.
Step 2: Remove the seeds from the pomegranate. We have made a simple guide how to do this the easy way. Find the guide on our blog.
Step 3: Peel the orange and cut it in fine slices.
Step 4: Rinse the apple, remove the core and dice it.
Step 5: Mix all the prepared ingredients in a bowl or on a salad plate.
Step 6: Make the dressing; whip honey, balsamic, olive oil, salt and pepper together in a bowl. Pour the dressing over the salad.
Step 7: Gently mix the salad and serve it right away.

Recipe for Healthy Brownie without sugar and flour

On this page, I will share one of my personal favorite recipes - a super delicious and healthy Brownie made without any use of refined sugar and flour. If you continue to read on this page, I will show you how it is possible to make a super delicious Brownie cake, which is a healthy alternative to regular Brownie.

The secret how to make Brownie without sugar and flour

As mentioned just above, this brownie cake is made completely without any use of refined sugar and flour.

But how is it possible to make this brownie, which is perfectly comparable to a normal brownie packed with sugar and flour?

In just two words the secret is: dates and chickpeas. Trust me it is perfect.

Before you get scared away I will promise you that will not be able to taste either the dates or the chickpeas. You will only be able to taste the delicious chocolate brownie.
In this healthy brownie, the sweetness from the sugar is replaced by the sweet dates and the consistency from the flour is replaced by the chickpeas. It is that simple.

Brownie with dates as replacement for sugar

Before we continue, I will of course clarify that this cake is not sugar free. However, it is completely free from traditional refined table sugar. A cake need sweetness, which we in this case gets from the natural occurring sugar in the dates.

So no refined white sugar only natural occurring sugar from the dates.

Dates are known for its sweetness and is therefore a perfect substitute for traditional refined sugar. I love dates and I have several recipes here on my Nordic Food blog where the refined sugar is substituted with dates.

Healthy brownie with chickpeas and dates

Recipe for healthier brownie with chickpeas and dates. Do not be scared. This brownie has a great taste and delicious moist texture, just like an old-fashioned brownie just without sugar and flour.

Ingredients

  • 100 g almonds
  • 50 g butter melted
  • 20 dates (without stones)
  • 3 eggs
  • 1 can chickpeas (or kidney beans)
  • 3 tbsp cocoa powder
  • 1/2 tsp salt
  • 1/2 dl strong coffee
  • 100 g dark chocolate

Topping

  • 75 g dark chocolate
  • 50 g walnuts

Instructions

  • Use a blender or food processor to chop the almonds into a coarse flour. There may be some half-rough pieces left.
  • Add eggs, melted butter, dates without stones, drained chickpeas, cocoa powder, salt and coffee. Blend to an even consistency.
  • Chop the chocolate and add it to the batter.
  • Pour the batter into an approximately 10x20 cm (4x8 incbaking tin lined with baking paper.
  • Bake the cake in a 200 C (400 F) preheated oven for 20-25 minutes.
  • After baking, remove the hot brownie from the oven. Spread finely chopped chocolate on top so it can melt. Decorate with walnuts.
  • Allow the cake to cool in the refrigerator and serve.

Healthy Nordic Spinach Buns for Breakfast

I normally have these spinach buns as a part of my breakfast or sometime as lunch. Because of the high amount of dietary fiber and vitamins, these buns are very filling and therefore well suited as a breakfast.

Ingredients

  • 25 g fresh yeast (or equivalent dry yeast)
  • 4 dl lukewarm water
  • 1 tsp sugar
  • 2 tsp salt
  • 2 tbsp olive oil
  • 1 dl pumpkin seeds
  • 4 dl rolled oats
  • 200 g minced spinach (preferably from frost)
  • 300 g all-purpose flour
  • 150 g whole grain flour
  • 1 egg (for egg wash)

Instructions

  • Dissolve fresh yeast and sugar in lukewarm water. If using dry yeast, add this with the flour.
  • Add the rest of the ingredients and knead everything into a smooth and sticky dough. Keep kneading for 5-10 minutes. The dough is sticky it is just fine.
  • Cover the bowl with a dishtowel and let the dough rise somewhere warm for 1.5 hours.
  • Turn on the oven at 250 C (480 F). Allow the oven and oven tray to heat thoroughly while continuing with the next step.
  • Use two spoons dipped in water to set 12 buns on a sheet of parchment paper on the kitchen table. Brush the buns with an egg.
  • Adjust the oven temperature down to 225 C (440 F). Transfer the parchment paper with the buns onto the hot oven tray and bake the bread for 20 minutes. They are finished when they are golden.

Recipe for Homemade Salted Almonds

These salted almonds are super simple to make and they are very delicious. We normally use these almonds as a pre-dinner snack when having guests or pack them in small bag and bring them to work. They are perfect as a healthy snack in the late afternoon when you are just really hungry and the dinner is still hours away.

These homemade salted almonds are simple to make and it takes only about 40 minutes to make a batch. First let the almonds soak in a brine for about 20 minutes and then bake them in the oven for about 20 minutes - and that's it.

If you are more into a sweet almond snack I would like to recommend these sugar roasted almonds which is a traditional Nordic treat especially during Christmas and the winter months.

They are also super delicious and great as a snack for special occasions.

Ingredients

  • 200 g almonds
  • 4 tbsp salt
  • 2 dl boiling water

Instructions

  • Boil 2 dl (1 cup) of water and dissolve 4 tablespoons of salt in it. Turn off the heat.
  • Pour the almonds into the water and let them soak for about 20 minutes.
  • Drain the water from the almonds. Place the almonds in an even layer on an oven tray/pan lined with baking paper.
  • Sprinkle the almonds with some extra salt and bake them at 150 C (300 F) for about 20 minutes.

Recipe for Homemade Danish Rye Bread (The easy version)

This recipe I have posted here on this page is one of my favorite types of bread - the Nordic Rye Bread. This is actually the third recipe I have here on my blog for Rye Bread, but I simply just like it so much that I need different variations of this bread.

First Time Making Rye Bread?

If it is you first time you are making a Danish Rye Bread I will recommend you to follow my other recipe for Rye Bread made without sourdough. If you are looking for the most traditional recipe for rye bread, you should follow the recipe where the sourdough is used. Find both recipes in the section with bread.

Easy recipe for Nordic Rye Bread

As I have described just below, I love to experiment with different types of bread.

This recipe, for rye bread, is a result of this experimenting. A traditional Danish Rye Bread is made and based on a Sour Dough. A sour dough is a sour liquid dough packed with great bacteria, which are great as a rising agent for bread and especially rye bread.

The recipe I have listed below does not use sour dough but instead fresh yeast. The sourdough gives the bread a taste that is more traditional but I personally think fresh yeast does a good job as well.

In Denmark and the other Nordic countries, rye bread is typically served as a part of a lunch. The bread is cut in slices and served with all kinds of different topping like ham, beef, eggs, fish filet and so on - basically everything eatable food that you like.

Besides rye bread, you can find all kinds of delicious types breads in my bread section. I will recommend the walnut bread and the birthday buns.

Recipe for Homemade Danish Rye Bread (The Easy Version)

Instructions for Rye Bread without sour dough

Because this rye bread is make without sourdough, which typically takes about 4-5 days to prepare from scratch, it is actually easy to make this delicious bread.

In a large bowl, you start by adding lukewarm water and dissolve the fresh yeast in it. Then you add the rest of the ingredients except the flour and the poppy seeds. When everything is mixed well, step-wise add the all-purpose flour and stir well in-between. Now the rye bread dough should be like a thick porridge.

Coat/spray the inside of a bread pan with butter and pour the dough into it. Cover the bread pan with a dishtowel and set it aside to rise for about 1 1/2 hours. Finally, bake the bread at 180 C (360 F) for approximately 1 hour and 20 minutes. When done, let the bread cool off on an oven rack before cutting slices off it.

Danish Rye Bread (easy recipe)

Easy recipe for traditional Nordic rye bread make without sour dough. Because this recipe doesn't contain sour dough it is easy and fast to make. The recipe is a very delicious and healthy bread.

Ingredients

  • 25 g fresh yeast (or equivalent dry yeast)
  • 5 dl buttermilk
  • 2 dl lukewarm water
  • 1 tbsp honey (or malt syrup)
  • 1/2 tbsp salt
  • 2 dl cracked rye kernels
  • 1 dl sunflower seeds
  • 1 dl flax seeds
  • 1/2 dl sesame seeds
  • 2 dl whole wheat flour
  • 4.5 dl all-purpose flour
  • 50 g black poppy seeds

Instructions

  • In a large bowl; dissolve the yeast in the lukewarm water.
  • Add the rest of the ingredients except the all-purpose flour and poppy seeds. Stir to mix everything.
  • Complete the rye bread dough by adding the all-purpose flour step-by-step. Stir well in-between each step. The consistency of the dough should be like a thick porridge.
  • Set the dough aside somewhere warm and cover the dough with a clean dishtowel. Let it rise for about 1 hour.
  • Spray/coat the inside of a bread pan with some butter.
  • Pour the dough into the bread pan and sprinkle the top with poppy seeds.
  • Cover the bread pan with a clean dishtowel and set it aside some place warm for about 1 1/2 hours. This will let the rye bread rise.
  • Bake the bread at 180 C (360 F) for about 1 hour and 20 minutes. It is important to keep an eye on the bread during this time as the baking time might variate a little bit. The bread is done when it sound hollow when 'knocking' on it.
  • When the bread is done, remove it from the bread pan and let it cool off on an oven rack. It is normally a good idea to wait until the bread is cooled off before cutting it.

Nordic Broccoli Buns

These broccoli buns does of course contain a lot of broccoli - but do not get scared away because of that.

Personally, I love broccoli and the fact that it is packed with fantastic vitamins and dietary fibers these broccoli buns simple makes you fill full for a longer time.

Of course, these buns taste like broccoli - but not in the bad way - if you ask me. In my mouth healthy ingredients simple does taste better. If you try them I would love to hear from you in the comment section below.

I can recommend serving these buns for breakfast with a slice of cheese and some homemade jam - that is my personal favorite. However, you can also use them to make sandwiches for lunch or the afternoon.

Ingredients

  • 1 broccoli
  • 4 eggs
  • 100 g almonds (3.5 oz)
  • 100 g whole wheat flour (3.5 oz)
  • 200 g all-purpose flour (7 oz)
  • 1 tsp baking powder
  • 1 tsp salt
  • pumpkin seeds for topping

Instructions

  • Rinse the broccoli and cut it into smaller pieces. Discard the stalk. Pour it in a food processor or blender and blend everything into a fine texture. Remove the chopped broccoli from the blender and set aside.
  • Add the almonds to the food processor and blend again until the almonds are chopped into smaller pieces.
  • Mix the prepared broccoli and almonds with the eggs. Add the two types of flour, the baking powder and salt. Mix well.
  • On a parchment paper covered oven plate use to tablespoons to set 12 broccoli buns. It is good idea to dip the spoons in cold water.
  • Decorate the top of the buns with pumpkin seeds.
  • Bake them in the oven at 200 C (400 F) for 30 minutes.
