What I really like about this dish, besides that it is super tasteful and delicious is that it is super easy to make. It is basically just adding all the prepared ingredients in a large saucepan and simmering it for 30 minutes. When thinking about it - have I told you how much I love food that cooks it by itself? I love healthy fast food!

These rye buns with chocolate pieces are both healthy and very delicious at the same time. We personally love them as a little snack in-between two meals or as a healthy dessert for our lunch. In Denmark these buns are similar to the Chokorug which are sold at the very famous Lagkagehuset. Lagkagehuset is a Danish chain of bakeries which are selling traditional and modern bread and cakes. If you come to Denmark at some point you should definitely pay them a visit.

The chocolate buns are filled with healthy grains and delicious dark chocolate - if you heat them up a little they become even better. The recipe is actually pretty easy to follow. However, it does require a bit of preparation. These buns are based on a sourdough, which gives the bread a great dense and chewy texture with a crisp crust. This recipe for a healthy banana and chocolate shake is the reason that you should always have a few bananas in your freezer. When we have some bananas that are starting to get a little soft and brown at the edges, we never throw them out like most people would do.

This recipe for a shake with bananas and chocolate is super delicious, it only consist of four different ingredients and it takes about 5 minutes to make!
We just peal the ripe bananas, bag them in a plastic bag and freeze them so that they can be used at a later point - and by that saves some money from buying new ones. A frozen banana can be used for many different things like these healthy homemade banana pancakes - they are one of our most popular recipes.

The frozen bananas gives the shake a nice, smooth and cold consistency and the cocoa gives it a delicious chocolate taste and color. If you want to add more sweetness to the shake think about adding a table spoon of date syrup or honey.
This shake is perfect to be served right after a workout at the gym or maybe just as an late afternoon drink before dinner. When you have tried this shake, or the banana pancakes, you will never throw out bananas any more just because they are a bit brown, you will save them in the freezer.

If you have read some of the other recipes on our blog, you would know that we normally try to avoid carbs from white bread, pasta, potatoes etc. and replace it with salads. This salad with red cabbage, oranges and pomegranate is another salad that we like to make. The salad is perfect as a side dish for most meat and it has a wonderful taste.
The red cabbage brings a fresh and crisp feeling to the salad - it's just great. In Denmark red cabbage is a popular vegetable and it's especially used to make the famous Danish Red Cabbage which is a very popular side dish for many Danish Christmas dinners. Red cabbage is rich on vitamin A and C, and is very filling - a great and healthy salad.
We would also like to recommend our coleslaw with red cabbage and apples, which is another great salad.

Preparation time: 30 minutes
Danish title: Rødkålssalat med appelsin og granatæble
Cuisine: Danish
Ingredients:
1/4 red cabbage
1 pomegranate
1 apple
1 large orange (or 2 small)
50 g (2 oz) walnuts
1 tbsp honey
2 tbsp balsamic
3 tbsp olive oil
pinch of salt and pepper
Instructions:
Step 1: Cut the red cabbage finely.
Step 2: Remove the seeds from the pomegranate. We have made a simple guide how to do this the easy way. Find the guide on our blog.
Step 3: Peel the orange and cut it in fine slices.
Step 4: Rinse the apple, remove the core and dice it.
Step 5: Mix all the prepared ingredients in a bowl or on a salad plate.
Step 6: Make the dressing; whip honey, balsamic, olive oil, salt and pepper together in a bowl. Pour the dressing over the salad.
Step 7: Gently mix the salad and serve it right away.

On this page, I will share one of my personal favorite recipes - a super delicious and healthy Brownie made without any use of refined sugar and flour. If you continue to read on this page, I will show you how it is possible to make a super delicious Brownie cake, which is a healthy alternative to regular Brownie.
As mentioned just above, this brownie cake is made completely without any use of refined sugar and flour.

But how is it possible to make this brownie, which is perfectly comparable to a normal brownie packed with sugar and flour?
In just two words the secret is: dates and chickpeas. Trust me it is perfect.
Before you get scared away I will promise you that will not be able to taste either the dates or the chickpeas. You will only be able to taste the delicious chocolate brownie.
In this healthy brownie, the sweetness from the sugar is replaced by the sweet dates and the consistency from the flour is replaced by the chickpeas. It is that simple.
Before we continue, I will of course clarify that this cake is not sugar free. However, it is completely free from traditional refined table sugar. A cake need sweetness, which we in this case gets from the natural occurring sugar in the dates.
So no refined white sugar only natural occurring sugar from the dates.

Dates are known for its sweetness and is therefore a perfect substitute for traditional refined sugar. I love dates and I have several recipes here on my Nordic Food blog where the refined sugar is substituted with dates.

This recipe for Nordic vegetarian spinach buns is my newest favorite bread recipe. These Nordic inspired healthy spinach buns taste so good and does not have a strong taste of spinach, as you might think.
Although these healthy buns are full of spinach, whole grain flour, oats and grains, they actually taste great. Trust me, they are great!

In short, these spinach buns are both super healthy and at the same time super delicious. Read more to learn how easy they are to make.
I normally have these spinach buns as a part of my breakfast or sometime as lunch. Because of the high amount of dietary fiber and vitamins, these buns are very filling and therefore well suited as a breakfast.

As inspiration try serve a bun with a good homemade pesto and make a sandwich with fresh mozzarella cheese, ham and tomatos. Then you have a super delicious, very filling and healthy breakfast or lunch.
In the recipe, further down this page, gives you about 10-12 buns depending on how big you make them.
If you are going to use the buns for your daily lunch, I will recommend you freeze them. That way, you can easily defrost the buns, as you need them. Heat them in the oven or on your toaster and you have the most delicious buns ready for breakfast or lunch.

These salted almonds are super simple to make and they are very delicious. We normally use these almonds as a pre-dinner snack when having guests or pack them in small bag and bring them to work. They are perfect as a healthy snack in the late afternoon when you are just really hungry and the dinner is still hours away.

These homemade salted almonds are simple to make and it takes only about 40 minutes to make a batch. First let the almonds soak in a brine for about 20 minutes and then bake them in the oven for about 20 minutes - and that's it.
If you are more into a sweet almond snack I would like to recommend these sugar roasted almonds which is a traditional Nordic treat especially during Christmas and the winter months.
They are also super delicious and great as a snack for special occasions.

This recipe I have posted here on this page is one of my favorite types of bread - the Nordic Rye Bread. This is actually the third recipe I have here on my blog for Rye Bread, but I simply just like it so much that I need different variations of this bread.
If it is you first time you are making a Danish Rye Bread I will recommend you to follow my other recipe for Rye Bread made without sourdough. If you are looking for the most traditional recipe for rye bread, you should follow the recipe where the sourdough is used. Find both recipes in the section with bread.
As I have described just below, I love to experiment with different types of bread.
This recipe, for rye bread, is a result of this experimenting. A traditional Danish Rye Bread is made and based on a Sour Dough. A sour dough is a sour liquid dough packed with great bacteria, which are great as a rising agent for bread and especially rye bread.
The recipe I have listed below does not use sour dough but instead fresh yeast. The sourdough gives the bread a taste that is more traditional but I personally think fresh yeast does a good job as well.
In Denmark and the other Nordic countries, rye bread is typically served as a part of a lunch. The bread is cut in slices and served with all kinds of different topping like ham, beef, eggs, fish filet and so on - basically everything eatable food that you like.
Besides rye bread, you can find all kinds of delicious types breads in my bread section. I will recommend the walnut bread and the birthday buns.
Because this rye bread is make without sourdough, which typically takes about 4-5 days to prepare from scratch, it is actually easy to make this delicious bread.
In a large bowl, you start by adding lukewarm water and dissolve the fresh yeast in it. Then you add the rest of the ingredients except the flour and the poppy seeds. When everything is mixed well, step-wise add the all-purpose flour and stir well in-between. Now the rye bread dough should be like a thick porridge.
Coat/spray the inside of a bread pan with butter and pour the dough into it. Cover the bread pan with a dishtowel and set it aside to rise for about 1 1/2 hours. Finally, bake the bread at 180 C (360 F) for approximately 1 hour and 20 minutes. When done, let the bread cool off on an oven rack before cutting slices off it.

Personally, I love broccoli and the fact that it is packed with fantastic vitamins and dietary fibers these broccoli buns simple makes you fill full for a longer time.
Of course, these buns taste like broccoli - but not in the bad way - if you ask me. In my mouth healthy ingredients simple does taste better. If you try them I would love to hear from you in the comment section below.
I can recommend serving these buns for breakfast with a slice of cheese and some homemade jam - that is my personal favorite. However, you can also use them to make sandwiches for lunch or the afternoon.
