You should whisk the egg white until they are stiff so that you can turn the bowl up-side-down without the fluffy egg whites are running out. Hmm good question. I have never tried it but I think it might work OK with chocolate mousse instead of the white merengue. You just need be careful when adding the chocolate on top.
