Hi Lizzi. Actually the recipe for Danish buttermilk does not contain yogurt. It is buttermilk and some kind of soured milk (similar texture as milk just more sour). Maybe it is a special thing we have here in Denmark. However, if you cannot find the soured milk then you can also use some neutral yogurt (maybe in the ratio 2/3 buttermilk and 1/3 yogurt). Hi Christine. That's a good question. Sour milk is a typical European dairy product. It is made from whole milk which has been made a sour milk by adding bacteria (I think it is called a acidification process). Buttermilk is made from low fat skim milk. You can substitute the soured milk with another dairy product which has a creamy and sour-like taste.
